Antecedents and outcomes of restaurant employees’ food safety intervention behaviors

Restaurants are likely culprits of having foodborne illness outbreaks, causes of which are often linked to employees failing to control food threats during the flow of food. Research indicates that many food risks posed by restaurants could be thwarted if employees would intervene as threats are noticed. For unknown reasons, employees are not always motivated to reduced or eliminate threats when observing poor food safety behaviors, regardless of position, education, or experience in the industry.This study applies the elaboration likelihood model of persuasion (ELM) and protection motivation (PMT) theories to investigate employee reactions to food safety threats. Of keen interest was to identify employees of differing positions in the restaurant and to study how they react to food safety threats to either intervene, passively dismiss, or simply leave the location of the incident.     

Is brain hemisphericity a correlate of performance in problem-solving courses? A case study from an HBCU

The authors set out to determine the brain dominance characteristics of students enrolled in business statistics courses in a historically Black university in a major southeastern Texas city. Thereafter, the authors investigated the relationship between a student’s brain hemispheric preference and academic performance in college courses, which emphasize problem solving. The results reported in this study reveal that left brain– and right brain–dominant students are at parity when it comes to performance in a problem-solving course. Moreover, both left brain– and right brain–dominant learners perform better than whole-brain dominant learners in a problem-solving course.     

Complementarities between firm-sponsored training and information technology use

In this article, we investigate the presence of possible complementarities between investments in information technology (IT) and firm-sponsored training using economy-wide longitudinal representative workplace-level data. Since information on the firm’s capital stock is often missing in such representative data, we match our workplace records to tax data to construct measures of the firm’s capital stock. We find some evidence of positive complementarities between investments in human capital and IT, suggesting that on-the-job training can also have a positive impact on productivity when complemented with investments in CAD or other technologies.
